
This crispy and cheesy air fried parmesan zucchini is the perfect easy side dish. It's healthy, low carb, keto, gluten-free, and made in your air fryer in under 15 minutes. No breadcrumbs are needed!
Preheat your air fryer to 390°F.
In a large mixing bowl, combine zucchini, olive oil or spray, garlic powder, onion powder, salt, pepper, and parmesan cheese. Mix until zucchini is fully coated.
IMPORTANT: Carefully line the bottom of your air fryer with parchment paper, so the cheese doesn’t fall off into the basket or get stuck on the grate.
Add seasoned zucchini and air fry for 8 - 12 minutes, shaking zucchini every 3 minutes or so. The zucchini should be tender and slightly crisp; the cheese should be golden.
Enjoy warm, and serve with a squeeze of lemon juice if desired!
