Preheat your oven to 400°F (200°C).
Slice chicken breasts horizontally to create thinner cutlets.
Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper mixed together.
Dredge each chicken cutlet in flour, then dip in egg, and finally coat with the breadcrumb mixture.
Drizzle olive oil onto a baking sheet lined with parchment paper. Place the coated chicken cutlets on the baking sheet.
Bake for 15 minutes.
Flip the chicken cutlets and top each with marinara sauce and mozzarella cheese.
Bake for another 10-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
