This baked berry oatmeal is loaded with wholesome ingredients like oats, cinnamon, banana, and berries. Baked oatmeal is a warm breakfast casserole that is easy to make and lasts all week long!

Ingredients

  • 2 cups oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 egg
  • 1 cup mashed banana
  • 1 cup almond milk
  • 2 tbsp light oil (light olive oil, refined coconut oil, or canola oil)
  • 1 ½ cup frozen berries

    Firstly, preheat your oven to 350 degrees and grease your small casserole dish. A 10x6 or 9x6 casserole pan works best.

    Secondly, whisk together the wet ingredients in a large bowl: egg, banana, milk, and oil. Whisk until combined.

    Now add in the dry ingredients: add in the oats, cinnamon, baking powder, and salt. Mix until combined and then add in the frozen fruit

    Pour the batter into your prepared casserole pan. A 9x6 or 10x6 casserole pan work best. Bake at 350 for 30-35 minutes. Baking times can vary depending on your oven. The oats will be done when the top is set and golden brown.
