Creamy, light banana pudding fluff has all the flavors of the traditional Southern dessert, but whipped cream is added to make it airy and, yes, fluffy with a mousse-like texture.

Ingredients

  • 1box vanilla instant pudding mix
  • 2 cupswhole milk
  • 3 mediumripe bananas, sliced
  • 1 tbsp.fresh lemon juice
  • 1 ½ cupsheavy whipping cream
  • ½ cuppowdered sugar
  • 3 cupsmini marshmallows
  • 3 cupsvanilla wafers, lightly crushed
  • 1 cupchopped toasted pecans (optional), divided

    Gather all ingredients.

    Place pudding mix in a large bowl; whisk in milk until well combined. Set aside for a few minutes to thicken.

    Meanwhile, place bananas in a medium bowl; drizzle with lemon juice and toss gently to combine. Remove 1 cup of banana slices to a small bowl; mash well with a fork.

    Place cream and powdered sugar in a large bowl; beat with an electric mixer fitted with the whisk attachment at medium-high speed until very stiff peaks form, 2 to 3 minutes; be careful not to overbeat so much that the cream separates. Fold mashed banana into thickened pudding, then fold in whipped cream until well combined. Gently stir in remaining banana slices, marshmallows, vanilla wafers, and 3/4 cup pecans, if desired.

    Spoon mixture into a large serving bowl; sprinkle with remaining 1/4 cup pecans. Cover and chill at least 1 hour before serving.
