Customization & Variations
This BBQ Chicken Potato Skillet is wonderfully versatile, allowing for simple swaps to suit your pantry or preferences. Feel free to use boneless, skinless chicken thighs if you prefer dark meat, or even pre-cooked rotisserie chicken to shave off a few more minutes. For the potatoes, while small-medium potatoes are specified, you could use Yukon Gold or red potatoes cut into similar-sized pieces. Change up the cheese with a sharp cheddar or a Monterey Jack blend for a different flavor profile. If you like a little heat, a dash of cayenne pepper can be added to the potato seasoning mix.
Serve this hearty skillet meal hot, straight from the pan, for a truly satisfying family dinner. It pairs wonderfully with a simple green salad or a side of steamed corn to complete your spread.
