BBQ Chicken Potato Skillet

This is an easy 30 minute dinner the whole family loves!

Ingredients

  • 2chicken breasts
  • 5 smallmedium potatoes
  • olive oil + salt, pepper, garlic powder, and paprika (for potatoes)
  • ½ tspeach of salt and pepper
  • 1 tspeach of paprika, ranch seasoning, and onion powder
  • 2 tbspbutter
  • 1 tbspminced garlic
  • ½ cupbbq sauce
  • 1 cupshredded mozzarella cheese

Directions

    Peel, wash potatoes, and cut up into cubes.

    Toss with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).

    Cook potatoes in the air fryer at 400 degrees for about 20-25 minutes shaking them around at least a couple times while they cook.

    Once potatoes are cooking, cut chicken into cubes. Cook chicken in a skillet on medium high heat with a little butter.

    Season chicken with 1/2 tsp each of salt and pepper, 1 tsp each of paprika, ranch seasoning, and onion powder. Once chicken is finished cooking add the minced garlic and about 1/2 cup of BBQ sauce.

    Add cooked potatoes to the skillet and stir everything together. Top with shredded cheese.

    Broil in the oven for just a few minutes to melt the cheese (you could also cover with a lid and let this sit on the stove until cheese melts).

    Top with a little bit more BBQ sauce and enjoy!
