Beef and Potato Tacos

These beef and potato tacos are perfect for Taco Tuesday!

Ingredients

  • 4 smallmedium potatoes
  • olive oil + salt (pepper, garlic powder, and paprika)
  • 1 lbground beef
  • 1chopped onion
  • ½ tspsalt and pepper
  • 2 tspchili powder
  • 1 tspeach of cumin and dried cilantro
  • 1 tbspminced garlic
  • shredded monterey jack cheese
  • white corn tortillas
  • 2 tbspolive oil
  • 2 tbspbutter
  • 4 smalltomatoes (diced)
  • ½onion (diced)
  • 1jalapeño (diced)
  • ½a bunch of cilantro
  • 2limes (squeezed)
  • salt and pepper

Directions

    Peel, wash potatoes, and cut up into cubes.

    Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).

    Cook potatoes in the air fryer at 400 degrees for about 20 minutes shaking them around at least a couple times while they cook.

    Once potatoes are cooking, brown ground beef in a skillet over medium high heat.

    Add a chopped onion. Once beef is cooked drain any extra grease and add the salt, pepper, chili powder, cumin, and dried cilantro.

    Add the minced garlic to the ground beef.

    Lower the heat to a simmer.

    Add cooked potatoes to the skillet of ground beef.

    In a separate pan, heat olive oil and butter over medium high heat.

    Add a corn tortilla to the skillet, top with shredded cheese, and the ground beef/potato mixture.

    Fold the tortilla over and cook on both sides until golden brown and crunchy.

    Serve topped with pico, sour cream, and taco sauce!
