Enoki mushroom, wrapped in thinly sliced beef, paired with a savory umami sauce, and finished off with silken eggs, every bite is the perfect bite! Don’t eat beef? substitute with thinly sliced pork belly instead, and it will be just as delicious.
One thin slice of beef, one portion of enoki mushroom, roll it up and rest it opening side facing down.
In a bowl, mix dashi stock, soy sauce, mirin or sugar, and black pepper.
Drizzle oil in a pan, and Add onion. Turn the heat to medium-high and pan-fry for 3-4 minutes or until the onion is
slightly translucent and soft.
Place the sliced beef on top of the onion, drizzle in the sauce, put the lid on, and let it cook for 3 minutes.
Remove the lid, turn the beef, and depending on the cut/thickness of the beef, you may need to cook another 1-2 minutes.
Drizzle the egg all over the pan onto the sauce, and simmer for another 2-3 minutes.
Garnish with green onion, and enjoy!
