This version of the beloved Mexican sandwich uses creamy refried black beans and a mixture of vegan mayonnaise with the sauce from canned chipotles en adobo.

Ingredients

  • ½ cupsvegan mayonnaise (preferably just mayo brand; may substitute regular mayonnaise)
  • 2 tablespoonssauce from a can of chipotles en adobo, or more as needed (may substitute your favorite chipotle-flavored hot sauce)
  • 1 tablespoonextra-virgin olive oil
  • 1 mediumyellow onion, chopped
  • 3 clovesgarlic, minced
  • 1 tablespoonground ancho chile powder
  • 1 teaspoonground cumin
  • 3 cupscooked or canned no-salt-added black beans (from two 15-ounce cans, drained and rinsed)

  • ½ teaspoonsfine sea salt, or more as needed
