Ingredients
- 2 tbspdried chamomile flowers
for tea
- 1 chot water
- 1 oz30ml honey syrup
equal parts honey and water, mixed
- ½ oz15ml fresh lemon juice
- 3 oz90ml sparkling water
- ice cubes
- dried chamomile flowers
for garnish
- dried cornflowers or other edible dried flowers for garnish

Directions

Steep 2 tbsp of dried chamomile flowers in hot water for 5-7 minutes. Strain and let cool to room temperature.

In a shaker, combine 4 oz (120ml) of the cooled chamomile tea, honey syrup, and lemon juice.

Fill the shaker with ice and shake well for about 10-15 seconds.

Fill a glass with ice and strain the mixture over it.

Top with sparkling water and stir gently to combine.

Garnish with a sprinkle of dried chamomile flowers on top of the drink.
