The rich, buttery salmon is coated in a sticky, caramelized bourbon peach glaze that’s bursting with sweet peaches, warm bourbon, honey, and a touch of spice. Roasted to perfection, this dish is both easy enough for a weeknight dinner and elegant enough for entertaining.

Ingredients

  • 4salmon fillets (or one large 1 ½ lb fillet)
  • 1 tbspolive oil
  • salt and black pepper, to taste
  • 2ripe peaches, diced (or ½ cup peach preserves)
  • ¼ cupbourbon
  • 2 tbsphoney (or maple syrup)
  • 1 tbspdijon mustard
  • 2 tbspsoy sauce (or coconut aminos)
  • 2 clovesgarlic, minced
  • ½ tspsmoked paprika
  • ¼ tspred pepper flakes (optional, for heat)
  • 1 tbspbutter (for richness)
  • fresh chopped parsley or basil
  • peach slices for serving (optional)

Directions

    Preheat your oven to 400°F (200°C).

    Line a baking sheet with parchment paper or lightly grease an oven-safe skillet.

    Pat the salmon fillets dry, then rub them with olive oil, salt, and pepper.

    In a small saucepan, heat diced peaches, bourbon, honey, Dijon mustard, soy sauce, garlic, smoked paprika, and red pepper flakes over medium heat.

    Simmer for 5-7 minutes, stirring occasionally, until the peaches soften and the sauce thickens slightly.

    Stir in butter for a silky finish, then remove from heat.
