Add a taste of the bayou to your dinner with this easy Cajun Chicken Pasta recipe. It's perfect for a quick and tasty weeknight meal. The cajun seasoning gives it a spicy kick, while the creamy sauce makes it irresistibly creamy and delicious.

Ingredients

  • 1 yellow bell pepper (diced)
  • 1 red bell pepper (diced)
  • 1 lb. chicken tenderloins (diced into bite-sized pieces)
  • 1 lb. Rotini pasta
  • 32 oz chicken stock (low-sodium )
  • 2 tbsp garlic (minced )
  • 1 can fire-roasted tomatoes
  • 2 tbsp cajun seasoning
  • cup heavy whipping cream
  • 2 tbsp dried parsley (optional)
  • 1 cup cheese of your choice (shredded )

Directions

    In a large saucepan, heat a little bit of olive oil over medium-high heat.

    Add in your chicken and cajun seasoning. Stir until chicken is fully coated and cook untilthe chicken is brown. This should take about 3-5 minutes.

    Once chicken is cooked, transfer to a bowl and cover to keep warm.

    Without rinsing the pan, add in the bell peppers and cook until soft. Then add in garlicand cook until fragrant but not burnt. (feel free to add ½ tbsp of cajun seasoning here ifyou want a stronger cajun flavor)

    Pour in the chicken stock, can of tomatoes, and heavy cream. Bring this to a light boil,then add in pasta.

    Stir frequently and cook until pasta is tender. This should take about 12-15 minutes.

    Lower heat to medium/low and allow the sauce to thicken.

    Remove from heat and add in the cooked chicken, parsley, and shredded parmesan. Stirto coat the chicken and incorporate the parsley and parmesan.

    Salt and pepper to taste then serve!
