
Cheesy potato casserole, creamy, super cheesy and full of bacon, is THE perfect Thanksgiving side dish cheesy potato recipe for your upcoming holidays and family meals. Similar to a twice baked potato recipe, this easy potato casserole dish is a chunky potato favorite for everyone. I cannot think of any more loved starchy comfort food than potatoes and it's one of the best side dish recipes to feed a crowd inexpensively.
Preheat oven to 350 degrees Fahrenheit. Grease baking dish.
Cube red potatoes and boil just until fork tender. Do not overcook potatoes or they can fall apart.
Strain cooked cubed potatoes and pour them into a large mixing bowl. While potatoes are still warm, add butter, salt, black pepper, and parsley. Carefully stir until potatoes are coated with butter and seasoning. A spatula works generally well.
Allow potatoes to cool slightly, then mix in the sour cream, two cups of shredded Cheddar cheese, and the majority of the cooked bacon. Stir to combine all ingredients.
Pour potato mixture into a prepared greased casserole dish and top with remaining shredded cheese.
Bake cheesy bacon casserole for 15 to 20 minutes, or until cheese is completely melted.
Remove dish from oven and top with remaining cooked bacon and additional fresh parsley, if desired. Serve immedaitly.
