Easy weeknight comforting fall meal, the classic broccoli cheese and rice casserole. I made this Cheez-y Broccoli Chicken and Rice Casserole recipe to help families with busy weeknights. So I used a rotisserie chicken in this recipe. However, feel free to cook and shred/chop your own chicken to add to the casserole. Another time saving tip is using frozen broccoli. The benefit of using frozen broccoli is that it is already blanched and ready to go. If you use fresh broccoli make sure to blanch the broccoli first. (Blanched: scalding vegetables in boiling water or steam for a short time. This deactivates these enzymes so the peak quality is preserved).
