A can of Cherry Coke is the secret to this rich and chocolaty cherry cola cake.

Ingredients

  • baking spray with flour
  • 2 cupsall-purpose flour
  • ⅝ cupdutch process cocoa powder
  • 1 tsp.baking soda
  • ¼ tsp.table salt
  • ¼ tsp.baking powder
  • 3 largeeggs, at room temperature
  • 1 cupfirmly packed light brown sugar
  • 1 tsp.vanilla extract
  • 1 cupmayonnaise
  • 1 ⅓ cupcherry cola (such as cherry coke)
  • 1 cuppitted maraschino cherries, well drained and finely chopped (from 1 16 oz. jar)
  • ¾ cupunsalted butter, softened
  • ¼ tsp.table salt
  • 3 ½ cupspowdered sugar
  • ¼ cuppitted maraschino cherries, well drained and finely chopped
  • 2 tbsp.maraschino cherry juice
  • garnish: maraschino cherries

Directions

    Preheat oven to 350°F. Spray a 13- x 9-inch pan with baking spray with flour. Gather all ingredients.

    Whisk together flour, cocoa, baking soda, salt, and baking powder in a medium bowl. Pour cherry cola into a small saucepan and cook over medium-high until steaming, about 3-4 minutes.

    Beat eggs, sugar, and vanilla at medium-high speed with a stand mixer about 3 minutes or until mixture is very light in color. Add mayonnaise and beat at low speed until combined. Add flour mixture to egg mixture alternately with hot cherry cola, beginning and ending with flour mixture. Fold in chopped cherries.

    Pour batter into prepared pan. Bake in preheated oven until a pick inserted in the center of the cake comes out clean, about 30 to 35 minutes. Let cool completely on a wire rack, about 1 hour.

    To prepare frosting, in a large bowl, beat butter and salt with an electric mixer on medium speed until butter is smooth and light, about 1 minute. Add powdered sugar and mix until smooth. Add maraschino cherry juice; beat until evenly combined and fluffy, about 2-3 minutes. Beat in drained chopped cherries. Spread frosting over cooled cake and garnish with additional maraschino cherries, if desired.
