Ingredients

  • ⅓ cupall-purpose flour
  • ½ teaspoonsalt

  • 1 poundsboneless skinless chicken breasts, cut into 1-inch pieces
  • 3 tablespoonsbutter
  • 1 mediumonion, sliced
  • 3celery ribs, sliced
  • 2 mediumpotatoes, peeled and cut into 3/4-inch cubes
  • 3 mediumcarrots, cut into 1/4-inch slices
  • 1 cupchicken broth
  • ½ teaspoondried thyme
  • 1 tablespoonketchup
  • 1 tablespooncornstarch

    In a large shallow dish, combine the flour, salt and pepper. Add the chicken, a few pieces at a time, and turn to coat.

    In a large skillet, melt the butter, then cook the chicken until the juices run clear. Add the onion and celery, and cook for three minutes. Stir in the potatoes and carrots.

    Finish the stew In a small bowl, combine the broth, thyme, ketchup and cornstarch, then stir the mixture into the skillet. Bring to a boil. Reduce the heat, then cover and simmer for 15 to 20 minutes or until the vegetables are tender.
