
In your food processor, combine your chickpeas, garlic, chives, lemon juice, onion powder, red pepper flakes, salt, and pepper.
Blend until crumbly—about 30 seconds.
Transfer your chickpea mixture to your mixing bowl.
Taste your mixture and add more of any of the seasonings you’ve already added to taste.
Add mayonnaise, egg, and flour. Use your rubber spatula to fold it all together until you have an even mixture.
Use your hands to roll 9 1 inch balls.
Over high heat, heat your vegetable oil in your frying pan.
Once hot, one by one place your fritters onto the pan.
Fry them all until they are golden brown on the side that’s touching the pan—about 2 minutes. Then use your metal spatula to flip them and fry for another 2 minutes (until golden brown)
Use your metal spatula to transfer your fritters to your paper towel lined plate to absorb any excess oil. Let sit for 2 minutes.
