These decadent 30-minute chocolate lava cakes feature a warm, gooey center that oozes with molten chocolate. They're pure indulgence in every bite!
Preheat the oven to 425°Fahrenheit (220°C). Lightly coat four 6-ounce ramekins with cooking spray. Dust with cocoa powder to prevent sticking, then set aside on a baking sheet.
In a heatproof bowl, combine the chopped chocolate and butter. Microwave in 20-second intervals, stirring well between each spin, until smooth. Set aside to cool.
In a separate bowl, beat the sugar, eggs, and egg yolks with an electric mixer until pale and thick, about 2–3 minutes.
Add the cooled chocolate and sprinkle the flour and salt over the top. Fold gently by hand just until combined.
Divide the batter evenly into the ramekins and spread flat. Bake for 9-12 minutes until the edges are firm and the centers are set but slightly jiggly.
Let the cakes rest for 1 minute, then carefully run a knife around the edge of each ramekin to loosen them. Immediately invert each lava cake onto a dessert plate and serve with powdered sugar, a scoop of vanilla ice cream, or fresh berries. Enjoy!
