Cilantro Lime Chicken is an easy healthy meal that can be made in the Instant pot or slow cooker! Great for tacos, salads, or by itself!

Ingredients

  • 24 ounces salsa, (whatever type you like)
  • 1 package reduced sodium taco seasoning
  • 1 lime juiced and zested
  • 1/4 cup water or stock
  • 1 can reduced sodium black beans, (rinsed and drained)
  • 1 jalapeno, (seeded and diced)
  • 2 lbs boneless skinless chicken breasts
  • handful fresh cilantro, (chopped)
  • cooked white rice, (serve chicken on top)
  • flour tortillas, (serve like tacos)
  • corn tortillas, (serve like tacos)
  • cooked quinoa, (place chicken on top)
  • limes, (squeezed)
  • colby jack cheese, (shredded)

Directions

    Using at least a 6qt instant pot, add all ingredients for the chicken into the pot, except the cilantro. Close the lid, seal the pressure valve, then set on manual/high for 15 minutes.

    Add all of the ingredients to the slow cooker, including HALF of the cilantro. Place the lid on top. Set the slow cooker to low and cook for 6-7 hours, or set to high and cook for 3-4 hours - confirm that the internal temperature of the chicken is at least 165 degrees.
