6 cups kale (de-stemmed and chopped into small pieces)
1 15 oz can of white beans (drained and rinsed)
1 large avocado (cut into cubes)
1/3 cup sunflower seeds or pepitas (they use both but seems v unnecessary)
1/4 cup hemp seeds
Sea salt & black pepper
1 lemon (juiced)
1 tbsp maple syrup
1 tbsp Dijon mustard
1/4 cup extra virgin olive oil
Pinch of salt

Prep your kale and place into a large bowl. Make your dressing by whisking together all ingredients and toss into the kale. Add remaining ingredients and serve!
