Ingredients

  • 2 large eggs
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can creamed corn
  • 1 (8 ounce) box Jiffy corn muffin mix
  • 1 cup shredded cheddar cheese, optional

Directions

    Preheat the oven to 350 degrees Fahrenheit. Grease a 9x13-inch baking dish with cooking spray or butter and set aside.

    In a large mixing bowl, whisk the eggs, sour cream, melted butter, salt, and pepper until smooth.

    Add the whole kernel corn, creamed corn, Jiffy corn muffin mix, and cheese (if using). Stir until just combined.
