A high-protein breakfast option that are great for meal prep!

Ingredients

  • 5 cup baby portobello mushroom (or spinach)
  • 5 cup chopped red bell pepper
  • ¼ cupchopped sweet onion
  • 5 cup chicken breast (roasted, optional)
  • 1 cupkale (finely chopped)
  • 8eggs (large)
  • 1 cupcottage cheese (2% mild fat)
  • ¼ cupnutritional yeast (optional)
  • 5 tsp salt
  • 5 tsp black pepper

Directions

    Combine eggs, cottage cheese and cheese in a large bowl. Blend the eggs and cottage cheese first if you want to.

    Stir in meat, veggies and seasoning as desired.

    Spoon into a well-greased muffin tin and fill them too the top.

    Bake at 375 degrees for 25-30 minutes or until eggs are set.
