What makes these fritters truly special is the thoughtful combination of all-purpose and yellow corn flour, which contributes to their signature crisp exterior. Customization & Variations
Feel free to experiment with these delicious fritters. For a different cheesy flavor, consider using a sharp white cheddar or a good quality Parmesan in place of Manchego. If fresh chives aren't available, a touch of finely chopped parsley or cilantro can offer a similar fresh aromatic lift. You could also explore adding a pinch of cayenne pepper to the batter for a bit of heat.
These versatile fritters make an excellent appetizer for entertaining, a delightful addition to a tapas spread, or a flavorful snack with your favorite beverage. Serve them warm, garnished with extra chopped chives, alongside the creamy Spanish paprika yogurt dip for an unforgettable experience.
