About this Recipe
Seeking that authentic, zesty kick for your barbecue? This East Carolina Vinegar Sauce, also known as a BBQ Mop Sauce, delivers a perfect balance of tangy and spicy to elevate any grilled dish. It’s the quintessential flavor foundation for traditional Southern barbecue.
What makes this vinegar sauce truly exceptional is its deliberate blend of apple cider vinegar and rice vinegar, creating a nuanced depth of tanginess that stands out. Coupled with red pepper flakes and a generous measure of hot sauce, it builds a vibrant, building heat that's both bold and inviting. Its notably thin consistency is key, allowing it to penetrate and infuse flavor deeply into meat, rather than simply coating it on the surface.
Prepare your palate for a lively, bright flavor that starts with a sharp, clean tang and gracefully transitions into a warming, lingering spice. The subtle sweetness from light brown sugar masterfully rounds out the vinegar's edge, preventing it from being overly harsh, while garlic powder, dry mustard, and smoked paprika weave in those classic, aromatic barbecue undertones. This East Carolina Vinegar Sauce is designed to infuse robust flavor, promising a satisfyingly piquant and peppery finish that keeps you coming back for more, all at just 37 calories per serving.
Customization & Variations
You can easily tailor the heat level to your preference by adjusting the amount of red pepper flakes or by choosing a milder or spicier hot sauce. While the recipe’s balance of apple cider vinegar and rice vinegar is ideal, experimenting with a different ratio or even a splash of white vinegar could offer a new twist. A touch more light brown sugar will increase the sweetness if you prefer a less assertive tang.
This versatile BBQ mop sauce is an absolute essential for any barbecue enthusiast. It's perfect for barbecue classics like slow-cooked pulled pork, grilled chicken, or even to add a zesty finish to smoked ribs, soaking into the meat to deliver that characteristic East Carolina flavor.
