If you're the meat & potatoes type, this is the perfect recipe for you! This tender and juicy sirloin with herbaceous and flavorful Chimichurri sauce and a side of baked potato is so easy to make and only uses 5 ingredients from Trader Joe's!

Ingredients

  • grass fed beef sirloin roast
    1 lb
  • chimichurri sauce
    8 oz
  • potatoes
    2
  • sour cream

    about 3 oz

  • sharp cheddar cheese
    4 tbsp
  • olive oil
  • salt & pepper
  • garlic powder
  • butter

Directions

    Wash & dry the potatoes, then poke 5-6 times with a fork. Brush the potato skins all over with olive oil and sprinkle with sea salt.

    Place them in a pre-heated air fryer and air fry them at 400 for 45-50 minutes, flipping over halfway.

    Open the package of the beef sirloin and empty the meat into a greased baking dish along with its juices. Season the meat with salt, pepper and garlic powder. Place 2 tablespoons of butter on top of the meat and bake at 375 for 18-20 minutes. Note: If you are only using half of the meat, bake at 375 for 10-13 minutes.

    Once the potatoes are done cooking, slice them open and add in desired amount of butter and cheese, then place back inside the air fryer for another minute or two until the cheese is melted.

    Top with Sour cream and garnish with chives or green onion (optional)

    Once the beef is done, remove them the oven and plate it. Season to taste and add a generous amount of chimichurri over the slices of beef. Enjoy!
