Easy Low Carb Keto Cottage Cheese Chicken Patties

Ingredients

  • 12 ½ ouncecanned chicken (drained or cooked chicken breast)
  • 1 largeegg
  • ⅓ cupcottage cheese (or see notes above)
  • ⅓ cupcheddar cheese
  • ⅛ tspsalt and pepper ( you could skip if you feel cottage cheese is already salty enough for you)
  • 1 cuppork rind panko (or see notes above)
  • optional seasonings garlic powder, onion powder or add some fresh herbs like chopped fresh parsley

Oven instructions

    Preheat oven to 400 degrees F. Line a small baking sheet pan with parchment paper.

    Place all ingredients into a food processor, except the pork rind panko, and blend until combined.

    Use a heaping 1/4 cup measuring cup and drop mixture into pork rinds to coat. Make 5 patties.

    Bake for 15 minutes. Broil for 5 minutes.

Air fry

    Preheat air fry to 400 degrees F. Air fry for 10 minutes or until golden brown.

Storage

    Place leftover chicken patties in an airtight container and store in the fridge for 2 days.
