
These crispy zucchini fries are made with fresh zucchini, grated parmesan cheese, EVOO, garlic powder, onion powder and salt and pepper to taste with no breading! They're low-carb, gluten-free, and vegetarian.
First, wash the zucchini and pat them dry with a paper towel.
Then, trim off the ends and cut the zucchinis into four-inch or so long strips. Try to make them as uniform in size as possible for even cooking.
Next, in a large mixing bowl, combine the grated Parmesan cheese, olive oil, garlic powder, onion powder and pepper. Stir it together.
Then, put the zucchini strips in the bowl and coat them with the Parmesan mixture. Stir to make sure zucchini strips are well-coated on all sides for maximum flavor.
Next, preheat your air fryer to 400°F (200°C) for a few minutes. If your air fryer requires preheating, follow the manufacturer's instructions.
Then, once the air fryer is preheated, arrange the zucchini strips in your air fryer in a single layer on the trays or the air fryer basket. Make sure they're not overlapping to allow for proper air circulation.
Next, set the temperature to 400F and the timer for 10 minutes, flipping them halfway through the cooking time. Keep an eye on them to prevent burning—they should be golden brown and crispy when done. If you're using an air fryer with trays, the top tray will cook faster than the bottom, so you will need to remove that tray before the bottom one when it's done cooking and move the bottom one to the top.
Then, once the zucchini fries are done cooking, remove them from the air fryer and let them cool slightly. Serve them with your favorite dipping sauce, like tomato sauce or ranch dressing.
