These muffins are made without flour or refined sugar and come together quickly with just a whirl in the blender and a quick bake in the oven.
Preheat oven to 400 F.
Lightly grease cups of a standard muffin tin.
Blend all ingredients, except the chocolate chips, together in the blender, scraping down the sides as necessary.
Fill muffin cups 2/3 full.
Sprinkle a few mini chocolate chips on top of each muffin. (I use semi-sweet)
Bake for 7-9 minutes until golden.
Remove from oven and let cool for 2-3 minutes before removing to a cooling rack to cool completely.
