About this Recipe
Garlic Parmesan Crockpot Chicken and Potatoes
This slow cooker favorite delivers maximum flavor with minimum effort. Tender chicken breasts and baby potatoes cook low and slow in a garlicky, parmesan-infused broth that becomes a luscious sauce. It's the ultimate dump-and-go dinner for busy weeknights.
Why This Recipe Works
The slow cooker does all the heavy lifting, allowing the chicken to become incredibly tender while the potatoes absorb all that garlicky, cheesy goodness. The parmesan melts into the cooking liquid, creating a rich sauce that coats everything beautifully.
Tips for Best Results
- Don't lift the lid: Every time you open the slow cooker, you lose heat and add cooking time.
- Halve the potatoes evenly: Uniform sizes ensure even cooking—no mushy or underdone pieces.
- Use freshly grated parmesan: Pre-grated cheese has additives that prevent proper melting.
- Add cheese at the end: Stirring in more parmesan before serving boosts flavor and creates a creamier sauce.
Serving Ideas
Serve with a side of steamed green beans or a crisp salad. The cooking liquid makes an excellent sauce spooned over everything. Crusty bread is perfect for soaking up every last drop.
