Old Fashioned Noodle Pudding

Ingredients

  • wide egg noodles
    16 oz.
  • butter
    1 tbsp
  • eggs
    6 large
  • cottage cheese
    1 lb
  • sour cream
    1 pint
  • kosher salt
    1 tsp
  • white sugar
    1 c
  • lemon juice
    1 tsp
  • golden raisins
    1 c
  • ground cinnamon
    ½ tsp
  • corn flakes
    ½ c
  • white sugar
    2 tsp
  • ground cinnamon
    ½ tsp
  • butter
    2 tbsp

Directions

    Soak raisins in a bowl of water to plump.

    Cook noodles al dente, drain and rinse under cold water. Set aside.

Filling

    Beat or whisk eggs well.

    Add cottage cheese, sour cream, sugar and lemon juice and beat well.**
