A quick, colorful, and zesty Greek Orzo Salad with fresh vegetables, feta, and a bold vinaigrette.

Ingredients

  • 1 cuporzo pasta
  • 1 cupcherry tomatoes, halved
  • 1cucumber, diced
  • 1red bell pepper, chopped
  • ¼red onion, finely chopped
  • ⅓ cupkalamata olives, sliced
  • ½ cupfeta cheese, crumbled
  • ¼ cupfresh basil, thinly sliced
  • ¼ cupolive oil
  • 2 tbspred wine vinegar or lemon juice
  • 1 tspdijon mustard
  • 1garlic clove, grated
  • 1 tspdried oregano
  • salt and black pepper to taste

    Boil orzo in salted water until al dente. Rinse under cold water and drain.

    Chop all vegetables and herbs.

    Whisk together olive oil, vinegar, mustard, garlic, oregano, salt, and pepper.

    Combine orzo, veggies, and feta in a bowl. Add dressing and toss.
