1. Set your grill, grill pan, or skillet to medium-high heat.2. In a bowl, toss the chicken, paprika, onion powder, garlic powder, and salt together. Grill the chicken until lightly charred, 5-8 minutes per side, depending on the size of your chicken. Shred the meat and toss with 1/2 cup buffalo sauce.3. Meanwhile, make the ranch dressing. Combine all ingredients in a jar, mixing until creamy. Then, season with salt. 4. To make the ranch slaw. Toss the cabbage with the ranch dressing, cilantro, and green onion.5. To make the sandwich. Lay the rolls, cut side up, on a cutting board. Spread the ranch dressing over the bottom piece of bread, then add the chicken and layer on 1-2 cheese slices per sandwich. Place on the grill (or use the broiler), cover, and cook until the cheese is melted. 6. Top the melty cheese with the ranch slaw and extra buffalo sauce. Close the sandwiches. Serve hot with extra ranch. Yum!

About this Recipe
Dreaming of the ultimate summer sandwich that's bursting with flavor? This Grilled Buffalo Chicken Sub Sandwich delivers a delicious experience, perfect for warm weather gatherings or a satisfying meal any day. It's truly a big, beautiful sub that promises every bite will be delish.
This recipe masterfully combines tender, grilled chicken infused with smoky paprika, onion, and garlic, then tossed in tangy buffalo sauce. Paired with a vibrant, herby dressing and crisp cabbage, it transforms a simple sub into a remarkably fresh and satisfying meal that's always more fun in the summer.
Prepare for a symphony of textures and tastes. Each bite offers juicy, spice-rubbed chicken with a fiery kick from the buffalo sauce, perfectly balanced by the creamy, cooling homemade dressing featuring sour cream, mayo, and buttermilk. You'll encounter the refreshing crunch of shredded cabbage, the aromatic freshness of cilantro and green onion, all tucked into a soft French baguette with delightfully melty pepper jack or cheddar cheese.
Feel free to adjust the heat by choosing a milder buffalo sauce or by slightly increasing the cooling ingredients in the dressing. For a different cheesy experience, try provolone or Monterey Jack instead of pepper jack or cheddar. If you're out of fresh herbs for the dressing, dried parsley and dill provide a good base, though fresh chives add a wonderful bright finish.
This impressive sub sandwich is ideal for casual summer lunches, backyard barbecues, or a flavorful weeknight dinner. Serve it with a simple side salad or your favorite potato chips for a complete and utterly enjoyable meal.
