Ingredients

  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 3 cups beef stock
  • 1 tablespoon ketchup
  • 2 tablespoons sugar
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon heavy cream
  • pepper to taste

    Melt butter in a 10-inch skillet over medium-high heat.

    When the foaming subsides, add flour and cook, whisking constantly, until flour turns golden brown, about 30 seconds.
