
This is one of our favourite no-oil and sugar-free granola recipes. It makes a huge batch of granola that can be enjoyed for days and days - on smoothies, plant-based yogurts, or as a snack. It's slightly sweet and slightly savoury, and the flavours can be varied up each time depending on the dried fruit or nuts added in.
Line a baking tray and preheat the oven to 300°F (150°C)*.
Add all the dry ingredients to a large bowl and mix.
Add the wet ingredients to a small food processor and blend until smooth**.
Add the date mixture to the bowl and mix to combine.
Spread the granola evenly on the baking tray. Bake on the centre rack of the oven for 25 - 30 minutes, stirring once or twice throughout.
When the granola is lightly golden, remove from the oven. When fully cooled, transfer to an airtight container or large glass storage jar. Enjoy!
