Make this healthy rice and chicken dinner skillet in no time using chicken breast, cooked rice, frozen peas and whatever vegetables you have at home!

Ingredients

  • 10oz/ 280g chicken breast, cut in strips
  • 1 ½ tbsp olive oil
  • 3 garlic cloves, minced
  • 2 cups zucchini, chopped
  • 1 bell pepper, chopped
  • 1 cup frozen peas
  • 2 cups rice, cooked
  • 1 ½ tbsp tamari sauce
  • 3 scallions, thinly chopped

Directions

    Cook the chicken with olive oil for about 4 minutes. Then add the zucchini, garlic and bell pepper. Saute for 2 minutes, then stir in the peas for 3 more minutes.

    Add in the cooked rice and tamari sauce, letting the rice toast and stirring occasionally for the next 2-3 minutes.

    Lastly, stir in the scallions and turn the heat off after about 1-2 minutes.
