Preheat your oven to 350°F (175°C).
Line a rimmed baking sheet with parchment paper.
In a large mixing bowl, combine pecans, pepitas, pistachios, rolled oats, cinnamon, and salt.
Mix the dry ingredients thoroughly until evenly distributed.
Pour in maple syrup, olive oil, and vanilla extract, and mix well.
Transfer the mixture to the prepared baking sheet.
Press the pistachio granola down firmly.
Bake for a total of 25 minutes, stirring halfway through (at the 12-minute mark).
