  • 8-10 pieces chicken (mix of drumsticks and thighs)
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ tablespoon ground paprika
  • 2 tablespoons extra-virgin olive oil
  • ¾ cup chicken stock or broth
  • ¾ cup soy sauce
  • ¼ cup granulated sugar
  • ½ cup cane vinegar (or white distilled vinegar)
  • 4-5 cloves garlic, minced
  • 1 medium yellow onion, sliced
  • 1 bay leaf
  • 2 scallions, sliced thinly
