These two dips are necessary for every Lao steak and sticky rice.

Ingredients

  • 10garlic cloves
  • 15fresh bird eye chili peppers
  • 2 tbspcilantro stem
  • 2 tbspsugar
  • ½ cupfish sauce
  • 1whole lime
  • 2 tbspcilantro leaves
  • 2 tbspcrushed pepper
  • 1 tbspkhao kua
  • ½ tspmsg
  • 1 tbsppadaek
  • 2 tbspfish sauce
  • 1 tbspbeef bile
  • little sliced green onion and cilantro
  • 1 tbspwater

Directions

    In a mortar and pestle, add the garlic then smash

    Add peppers and smash

  3. 3

    Add cilantro stems and smash

  4. 4

    Add sugar, fish sauce, lime, and cilantro leaves then mix

  5. 5

    Taste and adjust

    In a bowl, add the dry ingredients: crushed pepper, khao kua, msg, and mix

    Then add wet ingredients, padake, fish sauce, beef bile and mix

    Then add the herbs: green onion and cilantro then mix

    Add water to dilute and loosen

  10. 10

    Taste and adjust
