This easy keto Instant Pot chicken recipe is a family favorite NSNG recipe. It is made with chicken, spinach, artichoke hearts, and sun dried tomatoes, with a rich Parmesan cheese sauce. It is keto, nsng, gluten free, and low-carb friendly and can be made in any pressure cooker.

Ingredients

  • 4butterflied/thin cut chicken breasts or one package of chicken tenders
  • 1 canquartered artichoke hearts, drained
  • 1jar of sun-dried tomatoes, drained
  • 2 cupsfresh spinach
  • 2shallots, finely diced
  • 2 tablespoonsprepared minced garlic or 3 cloves minced
  • 2 tablespoonsbutter
  • 1 cupchicken broth
  • ¾ cupheavy cream
  • 1 ½ cupgrated fresh parmesan cheese
  • salt and pepper to taste

Directions

    Turn the Instant Pot to saute, add the butter, and saute the shallots for 2 minutes until translucent.

    Add the garlic and saute for 1 minute.

    Add the artichoke hearts, sun-dried tomatoes, chicken broth, and chicken breasts.

    Close and seal the lid and pressure cook for 5 minutes on manual high pressure.

    Natural release for 5 minutes, then quick release.

    Remove the chicken breasts to a plate.

    Turn the Instant Pot to saute and add the spinach, cream, and cheese.
