About this Recipe

Transform your leftover pulled pork into an exciting, low-carb dinner with this Cuban Casserole, a healthy and delicious way to bring new life to fridge staples.

This casserole is a brilliant solution for turning already cooked pulled pork into a completely new meal, rather than just reheating it. It cleverly deconstructs the beloved flavors of a classic Cuban sandwich into a comforting, oven-baked dish. This approach makes dinner prep a breeze, utilizing ingredients you likely already have on hand. Plus, its naturally low-carb profile makes it a smart choice for those seeking a satisfying, guilt-free meal without compromising on flavor.

Get ready for a rich and hearty experience that delivers on classic Cuban-inspired flavors. Each spoonful offers tender, savory pulled pork embraced by a creamy, luscious sauce. The tang and subtle crunch of dill pickles provide a bright counterpoint, cutting through the richness beautifully. Melty Swiss cheese adds a nutty, gooey layer that perfectly complements the robust notes of ham or Canadian bacon. The combination creates a uniquely comforting dish that’s both familiar and exciting, with a delightful balance of savory, creamy, and zesty notes in every bite. It’s a wonderfully satisfying meal that feels special but comes together with minimal fuss.

Tailoring this Cuban Casserole to your taste is simple. You can use Dijon mustard for a sharper, more complex flavor, or opt for yellow mustard if you prefer a classic, milder tang. For the cured meat, either thinly sliced ham or Canadian bacon will work beautifully, offering slightly different textures and saltiness while staying true to the dish's inspiration.

This hearty casserole is perfect for a busy weeknight dinner when you want something substantial and flavorful without a lot of effort. It’s a comforting meal that brings warmth to the table and is sure to be a family favorite, pairing well with a simple green salad.
