Drain and rinse two cans of chickpeas and add them to a bowl.
Dice one red onion and add it to the bowl.
Chop 1/3 cup of parsley and add it to the bowl.
Add the zest of a lemon.
Add half a cup of hemp hearts.
Add a whole tub of feta to the bowl.
For the dressing, combine three tablespoons of olive oil, three tablespoons of lemon juice (with seeds removed), and a tablespoon of maple syrup or honey.
Season the dressing with a good amount of salt and a few dashes of pepper.
Give the dressing a shake.
Dress the salad with the prepared dressing.
Shake the salad up well.
