- 2 mediumcelery stalks
chopped, about 1 cup
- 1 ½ tbsp.cajun seasoning
such as tony chachere’s
- 1 tbsp.finely chopped garlic
from 3 medium cloves
- 1 tsp.kosher salt
- 1 tsp.dried thyme
- 2dried bay leaves
or 1 fresh bay leaf
- ¼ cchopped fresh flat-leaf parsley
plus more for garnish
- thinly sliced green onions

Remove from heat and discard bay leaves. Stir in parsley and reserved rice. Garnish with green onions and serve immediately.
