This Creamy Tuscan Gnocchi is made with a sundried tomato cream sauce tossed in with pillowy gnocchi and topped with fresh parmesan cheese and basil. You will love this Marry Me Gnocchi!

Ingredients

  • 2 tablespoonsbutter
  • ½onion ((finely diced))
  • 4garlic cloves ((finely minced))
  • 1 cupchicken broth
  • 1 ½ cupsheavy cream
  • ½ cupsundried tomatoes (in oil)
  • ½ teaspoonsalt
  • ½ teaspoonpepper
  • ¼ teaspoonred pepper flakes
  • 1 lb.gnocchi ((shelf stable or refrigerated))
  • 1 cupfresh baby spinach
  • 4 ouncesparmesan cheese
  • 4fresh basil leaves ((cut into ribbons))
  • 1 teaspoonitalian seasoning ((optional))

Directions

    Heat a large skillet over medium heat. Add butter and onion and let cook for 6-7 minutes, stirring often. Add garlic and cook for 1 minute longer.

    Add the chicken broth, heavy cream, sundried tomatoes, salt, pepper, red pepper flakes, and optional Italian seasonings. Stir together.

    Add in gnocchi and let simmer in sauce for 5 minutes.

    Stir in baby spinach (I suggest tearing into small pieces or chopping) and parmesan cheese. Stir in fresh basil (reserving some for the garnish).

    When ready to serve, generously top with fresh basil ribbons and sprinkle on extra parmesan cheese. Serve immediately.
