Ingredients

  • 1 cup farro
  • 3 cups water or stock
  • 1/2 teaspoon salt
  • 1 pound boneless skinless chicken breasts ((2 large breasts))
  • 3 tablespoons olive oil
  • 1 lemon zest
  • 2 tablespoons lemon juice
  • 2 cloves garlic (grated)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 pint cherry tomatoes (halved)
  • 2 cups cucumber (chopped)
  • 1 cup kalamata olives (pitted and sliced)
  • 1/2 red onion (sliced)
  • 1 cup tzatziki sauce
  • 1/2 cup crumbled feta cheese
  • Lemon wedges (for serving)
  • Fresh dill and parsley (for garnish, optional)
  • 1 cucumber
  • 1 garlic clove
  • 1 cup plain yogurt
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon dried dill

    Rinse and drain farro. Place farro in a pot with salt and enough water or stock to cover it. Bring it to a boil; reduce heat to medium-low and simmer for 30 minutes. Drain off any excess water.
