This yummy Mexican Stir Fry comes together in minutes and is packed with wholesome ingredients! Made with chicken, bell pepper strips, and taco seasoning, it's a simple meal that's full of flavor.

Ingredients

  • 1 tbspmazola® corn oil
  • 1 lbchicken breast, chopped
  • 2bell peppers (any color), cut into thin slices (buy pre-cut at the store to save time!)
  • 1 cupchicken broth
  • 1packet, taco seasoning
  • 3 cupscauliflower (or brown or white) rice (i love the steam-in-bag variety)
  • optional, for serving: chopped cilantro, shredded cheese, sour cream

Directions

    Add Mazola® Corn Oil to large skillet, heat to medium.

    Add chicken to skillet and cook for about 10 minutes or until golden brown on sides.

    Add veggies, chicken broth, and taco seasoning. Stir to combine, then cook for another 10 minutes, stirring occasionally until chicken is cooked through.

    Meanwhile, heat up cauliflower rice.

    Serve stir fry atop rice with Mexican-themed toppings, as desired.
