Preheat oven to 375°F (190°C). Grease a regular muffin tin, including the rims.
In a medium saucepan, melt the butter. Add the milk and bring to a simmer.
Add the flour all at once. Stir vigorously with a wooden spoon over low heat until a ball of dough forms and pulls away from the sides of the pan.
Remove from heat and let the dough cool for 5 minutes.
Add the eggs one at a time, mixing thoroughly with a wooden spoon after each addition.
Divide the dough evenly among the prepared muffin cups. Sprinkle each puff with granulated sugar.
Bake for 30 minutes, or until puffed and golden brown.
Serve warm, drizzled with honey (optional) and/or topped with desired additions (e.g., whipped cream, fresh fruit).
