  • 2strips of bacon
  • 4 tablespoonsbutter
  • 1 cupdiced vidalia onion
  • 1 tablespoonminced garlic
  • 1 headgreen cabbage (washed and core removed, cut into wedges)
  • 1 teaspoonkosher salt (or to taste)
  • ½ teaspooncracked black pepper (or to taste)
  • 1 pinchred pepper flakes (optional)
  • 32 ounceschicken stock

    Heat a large pot, 3 quarts or larger) over medium heat.

    Cut the slices of bacon into pieces and add to the pot to cook and render their fat, stir occasionally.

    Once the bacon has released most of it's drippings, add the butter and diced onion. Sauté for 2 minutes.
