Ingredients

  • 1 tablespoon oil
  • 1 onion

    diced

  • ½ pound ground beef

    or Impossible plant-based ground

  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder*
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 2 cloves garlic

    minced

  • 8 oz elbow noodles
  • 1 can kidney beans

  • 1 ½ cup broth

    beef or vegetable

  • ½ cup shredded cheddar cheese
  • To serve: minced red onion

    jalapeno, scallions

Directions
