  • Carrot
  • Yellow Onion
  • Mushrooms
  • Olive Oil
  • Lean Ground Beef
  • Salt
  • Pepper
  • Chili Powder
  • Paprika
  • Garlic Powder
  • Bow Tie Pasta (Farfalle)
  • Beef Broth
  • Whole Milk
  • Tomato Paste
  • Shredded Cheddar Cheese
  • Parsley

Directions

    Prep vegetables by grating zucchini, peeling and dicing carrots, and dicing onion and mushrooms. Set aside.

    Heat a skillet to medium-high heat. Once pan is hot, drizzle with olive oil and add lean ground beef to the pan. Sauté, for 1-2 minutes, breaking beef into smaller pieces with a wooden spoon. Season with a sprinkle of salt and pepper, to taste.

    Add onions, carrots, zucchini and mushrooms to pan with the ground beef. Cook for 3-5 minutes, or until veggies begin to soften.

    Season with chili powder, smoked paprika and garlic powder. Stir well so the beef and vegetables are evenly coated.

    Add uncooked pasta, beef broth and milk to the skillet. Stir in the tomato paste until well combined.

    Season with additional salt and pepper to taste. Allow the mixture to come to a simmer, then lower heat to medium-low and cover with a lid. Simmer for 10-12 minutes or until the pasta is al dente and the sauce has thickened.
