Ingredients

  • 1wheel brie cheese (8 oz / 225 g), cut into 1-inch cubes
  • ½ cupcrushed pistachios (60 g)
  • 1 tbspolive oil (15 ml)
  • 12mini phyllo cups or sturdy crackers
  • ¼ cupraspberry preserves (80 g)
  • 1 tbsphoney (15 ml)
  • 1 tsplemon juice (5 ml)
  • extra crushed pistachios (optional garnish)
  • fresh thyme or rosemary (optional)

Directions

    Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Toss brie cubes in olive oil, then coat evenly with crushed pistachios.

    Place each cube into a phyllo cup and arrange on the baking sheet.
