Pizza Egg Rolls

Ingredients

  • 4 cups shredded pizza cheese blend or part-skim mozzarella cheese
  • 1 pound bulk Italian sausage, cooked and drained
  • 2 packages (3 ounces each) sliced pepperoni, chopped
  • 1 medium green pepper, finely chopped
  • 1 medium sweet red pepper, finely chopped
  • 1 medium onion, finely chopped
  • 2 jars (14 ounces each) pizza sauce
  • 32 egg roll wrappers
  • Oil for frying
  • Additional pizza sauce for dipping, warmed, optional

Directions

    Combine the cheese, sausage, pepperoni, green and red peppers and onion in a large bowl. Add the pizza sauce and stir to combine everything

    Place an eggroll wrapper in front of you with one corner pointing toward you and put 1/4 cup of filling in the wrapper, just below the center. Fold the bottom corner over the filling and then fold both side corners over the filling. Moisten the last corner with a little water, roll the egg roll tightly and seal the wrapper with that last corner.

    Heat 1 to 2 inches of oil in a deep cast-iron skillet or Dutch oven. The oil should reach 375°F. Fry the pizza rolls in batches for one to two minutes per side (two to four minutes total). Drain the eggrolls on paper towels and serve them with warmed pizza sauce if you want.
